Baby Blue Salad 3/4 pound mixed salad greens Basalmic Vinaigrette 4 ounces blue cheese, crumbled 1 cup mandarin oranges 1 pint fresh strawberries, quartered 1 cup pecan halves. 1 tablespoon chili powder 1 tablespoon red pepper Soak pecans in warm sugar water for 10 minutes, remove and drain. Toss pecans in 2 tablespoon sugar, 1 tablespoon chili powder, adn 1 tablespoon red pepper. bake on cooking sheet in oven at 350 for 6 minutes. remove and let cool to slightly warm. Toss greens and everything else(including pecans) with desired amount of baslamic, add blue cheese, toss again. serve. very good with pinot grigio. Enjoy. Missy - Do you eat sea critters or just veggies? cajun recipes are rae without the addition of one kind of critter or another. if no seafood, I'll post a desert. |

Its simple but must be planned ahead. This was appropriated from the Jefferson Avenue Boarding House. The day before soak 1/2 cup of raisins in a cup of brandy overnight (any brand of brandy will do). Prepare the desired amount of white rice (usually 1 cup cooked rice per person) according to the directions on the box. Top with half and half or light cream, brown sugar and the brandied raisins. |

The last time I prepared it was on a float trip. We had about 80 people. Breakfast that morning was the rice cereal, scrambled eggs, bacon, link sausage, several varieties of juice and coffee. The hardest part was getting the water to boil for the minute rice - we were using camp stoves. Also you have to lock up the raisins in brandy or they disappear. I had a crew of 10 to help me. |
